It is always problematic when the years aren't the same, but with mine
there is a 7 degree swing when the fan is operating automatically - on
at 196, off at 189. It helps that I have VMSpc to see the exact
numbers, but I can see the swing on the analog gauge.

When the fan is on override, the temp is essentially steady. If I'm in
cool weather on the flat it drops to, and holds at, 180, which is the
water thermostat.

When I'm climbing hills it may be in the mid 190s or even push 200
with the fan on, but again it makes only slow change.

I tend to blow a bit of coolant out the overflow when at or above 195, so
I normally turn the fan override on as soon as the engine is fully warm
unless I'm using the air conditioning (which also turns override on).
