Welcome to the WanderlodgeForum! Look in the Files section for an Airbrake Troubleshooting Guide for an overview of the system. Of course the easy approach is to fire it up and see if you have brakes, before you just start replacing everything. I'd inspect all the lines for obvious wear and tear or breaks. I'd look for rust and corrosion on all the components if there was moisture in the system while it sat. Does it have an air dryer on it? As far as the clutch, on that old a vehicle it should be just a mechanical linkage clutch. If the clutch lining is/was good, there shouldn't be much of a problem. It's just been sitting there sandwiched between the pressure plate and the flywheel safely tucked in bed all these years. It's either going to work or not. If it wasn't glazed or worn out to begin with, it should work. Good luck.
