Would like some idea's or pictures of how to change dinning area
I saw some pictures somewhere and the owner replaced the dinette with a
breakfast type bar and two stools. Had a desk type PC and it looked like enough
room for two grown folk to sit and eat fairly comfortably.

I agree that if I was a 12 year old it would be fine, but at 62
(and a bit of a belly) it's tough to slide in and out of the dinette.
We don't use it for a bed, so I don't need to worry about double
duty. One easy thing would be to replace the padding in the back
cushions with something about 1 inch thick. You could even make new
backs using flexible wood slats and eliminate the cushion all
together. That would gain about 2 to 3 inches per side and that
would make a difference.
I'm still thinking about it, I haven't made a plan yet.
