To me, it sounds like your fan may not be coming on or isn't
funtioning well when it does. Have you checked the radiator cap. It
may not be holding adequate pressure. On my '85FC the fan will hold
the temp to 190, + or - a couple of deg. This is on any hard pull.

Like Scott says, check your gage first.
