You should have the freon/refrigerant removed, then you can re-fill
with nitrogen to preserve it (otherwise air/moisture will get in when
you open the top).

Remove the unit from the roof, cap both rubber lines and both wires,
the lines can be removed from the roof and left below and the holes
plugged if you wish, but plugging the fittings works well, pull the
wires down below (mark if you wish), then drop the panel in the
overhead with the A/C blower controls and remove the wire that powers
the condensor unit and A/C compressor. This wire should be on the left
blower switch, you will find that one switch has more wires than the
other, remove the odd wire (and mark it). This way you can still use
the blowers to circulate air without turning on the compressor and
condensor power, another method would of course be to un-plug the wire
at the A/C compressor clutch (same result).

Don't toss the rooftop unit, if it is still useable either keep it with
the coach or offer it to this group, likely there is someone who can
use it.
