I don't know the specifics of the coach, but mobile air
thermostats are located at the evaporator (the actual cooling
coils for the AC). There will be a copper tube
that leads to it.
If it's the pressure switch, that's usually under
the hood and has a 2 wire switch to it. You can unplug
the switch and put a jumper wire connecting the
2 connectors together. Then the compressor should
come on.
It will look like an oil pressure sending unit screwed
into the AC line with 2 wires coming off it.
