Radiator cleaning
Indeed, your experience is similar to mine... 
On my maiden trip (from Dallas via Denver to the SF Bay Area) I saw temps as you mention -- including a bout of overheating (dash light came on) in eastern Nevada (many long grades). It was harrowing getting the coach home...
I actually changed the core on my radiator (having had it removed for $$$$$ by a radiator shop, it seemed better economics to pay a little more for a new (more efficiently designed core) than clean up and reinstall the old one). This was done shortly after I got the coach.
I now see normal water temp of 180-190, oil temp between 200-210 (higher on grades), and the transmission temp is usually under 200 (indeed, I can't recall seeing it over 200). (I tow a 3500# auto.)
So, I'd guess that there's some issue with your trans -- either the bottom of the radiator is still partially clogged (where the trans fluid is cooled) or the sensor/gauge may be incorrect. Did you attach a computer to the system to read the data? I found that my oil temp gauge is about right but my oil pressure gauge reads about 7-8 psi low (a relief to me)...
When I was down at CCW in Riverside, I had them steam clean the engine and the rear third of the underside of the coach -- and run the steam cleaner through the radiator -- and it was interesting to see the amount of crud appear. Radiator cleaning is probably a wise preventive maintenance to be done at least annually.
